No bake energy balls are one of my family’s favorite snacks, so I thought I would share this recipe with you. I think we’ve made them at least three times in quarantine. These energy balls only take about 10 minutes to make and include peanut butter, vanilla extract, honey, oats, flaxseed and chocolate chips – many ingredients you probably already have.
- 1 cup old-fashioned oats
- 1/2 cup creamy or crunchy peanut butter
- 1/3 cup honey
- 1/2 cup semi-sweet chocolate chips (we use mini)
- 1/2 cup ground flaxseed
- 1 teaspoon vanilla extract
Once you have all of your ingredients in a bowl, mix them until they are combined.
From there, you place them bowl in the refrigerator for the mixture to harden. Once hardened, you can roll the mixture into balls, size of your choice, and then they are ready to eat!
